Eggs are such a staple in majority of diets and ranked high on the nutritional scale. They are high in vitamin-B12, phosphorus, fats and amino acids. However not all eggs are equal in nutritional value and/or the condition as to which the hens are raised. 🐓In a standard warehouse chickens are soften kept in cages, mistreated/abused, unethical conditions, not allowed outside in sunlight or nature and livi in high stress. Due to these conditions we are faced with the outcomes of unethical production and a lower level of nutritional value in the eggs. 🐓Organic pastured raised produce the highest quality of life for the hens that lead to high nutritional quality of the eggs themselves. 🐓There are many other options like cage-free, free-range and/or omega-3. Where these options can provide a better quality egg but often do not change the living conditions to the hens. If we can try to make a conscious decision to chose the option that provides not only a higher nutritional value for ourselves but also the more ethical option for the animals. 🥒 veggie pakoras 🥕 Tried a new slimming world recipe today and the end result was amazing! It tasted similar to an onion bhaji and was soooo yummy. Took less than 30 minutes to prepare and cook, and I served it with a yoghurt and mint sauce (literally just fat free yoghurt, chopped up fresh mint leaves and a bit of garlic salt) as the Pakoras are a little spicy and I’m awful with spicy food. Full recipe below (for one serving): INGREDIENTS: * 60g canned chickpeas, drained and rinsed * 1 medium egg, beaten * ½ tbsp medium curry powder (or more if you like it hot) * 1 small garlic clove, crushed * ½ small onion, thinly sliced * 30g cauliflower florets, thinly sliced then roughly chopped * 30g finely shredded carrot (see tip) * 30g finely shredded courgette (see tip) * Low-calorie cooking spray METHOD: * Put the chickpeas in a small food processor with the egg, curry powder, garlic and ½ tsp salt. Blitz to a batter-like consistency, tip into a mixing bowl and stir in all the vegetables. * Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Using 2 forks, scoop up about one-fifth of the pakora mixture, drop it into the pan and repeat twice more. Flatten slightly with a fork and cook for 2½ minutes on each side, or until cooked through and golden. Transfer to a plate and repeat to make 2 more pakoras. Turkey roll ups and almonds 😍 my snacks for today. The truth; I realised after uploading the 4th day of my tracking calendar on my story that it looks like I have it all under control. So I thought I’d shed some light... I’ve yo-yo dieted since I was 16 years old (I’m now 21 🤗). Every summer holiday I would work so hard and I would lose weight but by the time the next exam season started the stress would lead me to regain the weight lost 😓. I’ve tried calorie counting before and to be honest it was so bad for my mental health - I did not like it at all 🙅‍♀️. I’ve tried all the extreme stuff like no carbs, or cutting out all snacking and it just never lasted because it’s just not feasible for me 🙄. This summer I decided to put an end to all that and to start a journey that would stick, this is the first time ever that whilst trying to lose weight I still feel so happy and that is honestly the key to staying on track. Once you find something that works for you - that you enjoy - it’s so much easier 😊. With that being said, of course I have hard days where I just want to eat a box of chocolates (maybe 2) and I do allow myself a cheat meal every now and again, but I don’t let myself give up because I’ve done that for 5 years and for once I want to see what happens when I don’t give up 💪. Although it looks like I have it all under control, I’ve struggled a lot and still do especially mentally.
