Hello from LA! 🤩 it’s been crazy busy lately since moving to the other coast. I’m loving my time here and trying out allll the yummy food. For cooking, I’m experimenting a lot with sweet potatoes esp since it’s a staple for the holidays. Here I made easy sweet potato chips that took only 20 minutes to bake! INGREDIENTS 2-4 salmon filets (more for larger family) 1 tsp garlic salt OR sea salt (no garlic if you don’t like garlic) A dash of ground black pepper 1/2 tbsp avocado oil to sauté 2 large lemons 1-2 tbsp of fresh dill (you may skip the dill if you don’t like it) 1 romaine lettuce OR red leaf lettuce (any lettuce is fine but NOT iceberg) 1/2 medium or large cucumber 6 radishes (slice them thin) 1/2 small red onion 2 avocados large avocados • . HOW TO PREPARE • . This is a super easy recipe to make! In a small bowl squeeze lemons, add your seasonings, garlic salt, ground pepper, and dill. Put it to the side. Wash all your veggies and lettuce. Dice your radish, cucumbers and onions. Wait until your salad is complete to slice the avocado. Toss the veggies and salad in a large bowl and set aside OR put the salad in 4 bowls or plates. Bring your salmon to the seasoning bowl and season it on both sides with your rub. • . In a large non stick pan, heat over medium with 1/2 tablespoon of avocado oil in it. Add your salmon and cook 3-4 minutes on each side or until golden or crispy depending on your taste. Put your salmon to the side and let it cool before putting on your salad. When the salmon has cooled. Serve your salmon over your salad and ENJOY😋 Use any vinaigrette based low calorie dressing for the salad OR try my recipe. • . Dressing Recipe 2 tablespoons of olive oil, 1/2 medium squeezed lemon, 4 tablespoons of white vinegar, sprinkle of Spike “Vege-Salt” vegan blend, a sprinkle of cayenne pepper, and ground pepper to taste. I have been drinking this for a few days now because I was feeling really low in energy. I do not eat any kinds of meats other than fish and try staying away from a lot of dairies and gluten. I take care of my body, I eat healthily and exercise often and do not eat meat for my own reasons. When I order a take away which is rarely I expect no meat to even touch my food. It was a texas bbq pizza with no chicken and no bacon but with extra peppers and onions from Dominos ordered tonight. A few weeks ago I had ordered another and it had to be sent back as the pizza was covered in chicken and bacon. I understand mistakes happen and it was replaced quickly but when it happens for a second time it makes a non meat eater very distressed to put a piece of bacon in their mouth. I knew right away it was bacon. Didn't expect it at all because I was looking to make sure there was no meat. Craig called to complain and the worker hung up on him. I'm so upset and angry at how we were treated. We VERY RARELY complain about anything. Winner winner Monkfish for dinner!! 🤩😋 Pan-roasted Monkfish, pea and asparagus risotto with crispy chicken skin #datenightdishes #DND #saturdaynightin Recipe below: . . . . ⭐️Pan-roast Monkfish: -To a roasting pan add butter, 3 thick slices of lemon, 3 whole gloves of garlic and turn on a low heat -Prep the monkfish fillets by removing the skin and check for any bones. You will need quite a thick slice to sit on top of the risotto. -Add the fillets to the pan and cook for 5 minutes on each side on a low heat. Make sure to keep basting the fish in the butter all the time. -Place in a pre-heated at 170° for 8 minutes. -One the fish has a nice golden colour, remove and leave to rest before serving. ⭐️Crispy chicken skin: -Remove the skin from the thigh or breast. Lay flat onto a chopping board and scrape off any sinew, day or meat to make sure it’s as thin as possible. -Place onto baking paper onto a baking tray. Put another piece baking paper I’ve the top and place a heavy dish on top to weigh down and press the skin flat. Cook for 15 minutes in a pre-heated oven at 200°. ⭐️Pea and asparagus risotto: -Finely dice 2 banana shallots and add to a pan with 1 clove of crushed garlic and a glug of olive oil on a medium heat. -Cook through until soft and golden and then add the risotto rice (between 65-75g if rice per person). Fry off the rice until lightly toasted. -Add 250ml of chicken stock. Place the lid on and leave to simmer for 15 minutes until the liquid has been absorbed. Add another 250ml of chicken stock and leave to simmer for another 15 minutes until the liquid has been absorbed. -Now add salt and pepper to taste, dried oregano and 175ml of white wine. Leave to simmer for 15 minutes. -To prep the asparagus, save all of the heads to use later. Slice the stems into medium sized pieces. Add to the pan, with frozen peas. -Cook for a 4 minutes until the peas have cooked through and stir through lots of grated Parmesan. Stir and mix through until combined. -Taste to check the seasoning and serve! -Sauté the asparagus heads in a small frying on with a little butter just before serving ⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️
