School just started back up but my mom already caught a little bug going around her district, cue the CHICKEN AND VEGETABLE SOUP 🍲 This recipe is super easy and is done from start to finish in the instant pot in under an hour, including prep time! ♡ 6 cups chicken stock 3 stalks celery, chopped 3 carrots, peeled and chopped 2 lbs chicken breast rosemary, thyme, parsley, oregano (hard to quantify but def don’t be shy) salt + pepper to taste ♡ throw everything in the pot (chicken and herbs on top) and let it cycle through the soup setting for 30 mins, naturally release for 20 mins, shred up the chicken and return to the pot!

Sausage Gumbo. #recipe : Brown a finely chopped onion. Lower heat, add garlic. Sautee on medium heat for a couple of minutes, then move the onions and garlic to one side of the pot. In the other, make a roux: butter, flour, stir regularly, cook until reddish brown. You will have to tilt the pot for this. Slowly add milk. Add black pepper, bay leaves, gumbo file, paprika, okra,chicken stock, cayenne pepper or other red chile, and water to taste. Simmer for at least an hour. Thirty minutes before serving, grill andouille sausage and chopped bell peppers and add to the pot. I ate with boca chorizo and eggs I was gonna make a video but the footage was messed up🙄 Breakfast blueberry cake recipe Preheat oven to 350 Ingredients : 6 TBS of Country Crock light butter spread 2 TBS of unsweetened applesauce 1/2 Cup Truvia baking blend Zest of 1 🍋 1 egg 1tsp vanilla 2 Cups all purpose flour 2 tsp baking soda 1/2 tsp salt 2 cups of blueberries 1/2 Cup of Buttermilk (1 packet of turbinado sugar and 1 egg beaten for brushing onto the cake) Wet ingridients: : In a large mixing bowl cream together the butter , Apple sauce and sugar ..it will be kind of runny, Add the zest of 1 one lemon, 1 egg and 1 tsp of vanilla and continue to mix...set aside. Dry Ingredients :::In a small mixing bowl add the 2 cups of flour 1/2 teaspoon of salt and 2 tsp of baking soda and mix till all the ingredients are incorporated... set aside Add about 1/2 the dry ingredients into the wet ingredients mix until it is incorporated then add a about 1/2 of the buttermilk then mix till incorporated again add about 1/4 of the dry ingredients mix ..then add the rest of the buttermilk and mix until you get a smooth thick batter.. With the remaining dry ingredients add 2 cups of blueberries and toss to get the flour onto all the blueberries... Then add to the Blueberries along with the remaining flour to the batter and slowly fold into the batter. Pour into a 9"x13" Pan and brush with egg(not all the egg will be used) sprinkle the packet of sugar overtop. Bake at 350 for around 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Boil fusilli until it’s al dente, not too long as it’ll be re-cooked 2. Chop up garlic, dice avocado and slice up the sausage (I removed casing purely for texture since I’m adding it to pasta) 3. In a pan, heat some olive oil and brown the garlic with sausage meat 4. Throw in your fusilli, add pesto and stir 5. Add in your avocado & spinach, and stir til spinach wilts 6. Season generously with salt pepper herbs and parmesan!
